This recipe is simple with very few ingredients. Anyone can do it no matter where you are on your sourdough journey. With no kneading necessary you'll want to make this bread for your family multiple times a week!

Before you begin

Before you begin you will need a bubbly active starter. If you do not have one yet see my guide on how to create your own sourdough starter.

Tools

Some tools I will mention in the recipe are:

How to make sourdough bread for beginners

Ingredients:

350 grams warm water

50 grams bubbly active starter

9 grams fine sea salt

500 grams bread flour

Steps:

Make the dough

Using a kitchen scale mix water and starter until combined (it will look like milky water).

Then add your salt and flour and mix until all the flour is incorporated. You will likely have to use your hands to finish mixing. The dough will be very sticky and shaggy.

Cover the bowl with Plastic wrap and let sit for 30 minutes to 1 hour.

Optional: Stretch and fold

After the dough has rested using wet hands stretch and fold the dough 4 times around the bowl. Place plastic wrap back on bowl.

Repeat this step 1 or 2 more times, every 30 minutes to 1 hour.

Bulk Rise

Cover the bowl with plastic wrap and let rest in a warm spot until double in size, about 8 to 12 hours depending on the temperature of your kitchen.

Shape the dough

Once the dough is doubled in size flour your work station leaving part un floured. Dump the dough onto the floured work station, let the dough deflate and then move it onto the non floured work station.

Now you are going to shape it by taking the top and folding it half way down, then turning it and doing the same on all 4 sides.

Then flip it over so the seam side is on the counter and using cupped hands pull the dough towards you while turning it until you are happy with the shape.

Second rise

Using a proofing basket or a 8 inch bowl lined with a clean tea towel. Lightly flour the inside

of your proofing basket and using a bench scraper place your dough seam side up into the basket. Cover with plastic wrap.

Let it rise on the counter for about an hour then transfer to the fridge for 1 to 4 hours.

Pre heat oven

Pre heat your dutch oven in the oven at 450ºF for 30 minutes

Score and bake

Take the dough out of the fridge and using enough parchment paper to transfer into the dutch oven flip your dough seam side down.

Lightly dust flour onto the dough and use your hands to spread it around.

Using a bread lame or a very sharp knife score your bread however you wish.

Remove dutch oven from oven and remove lid, carefully transfer the dough on the parchment paper into the dutch oven and put lid on.

Bake for 20 minutes

Remove lid

Bake for 30 minutes

This is removing the lid after 20 minutes

Let cool

When your bread is done baking remove it from the dutch oven and place on a wire rack.

Let cool completely before slicing (I know its hard, but its worth it)

Enjoy

Enjoy your fresh baked bread however you like!
